I’ve been rounding up holiday treat recipes that we can have which are: gluten/wheat-free, egg-free, dairy-free, peanut-free, and soy-free. I’m linking them all here so that if you are baking for someone with these allergies, you hopefully don’t have much searching to do!
Christmas Baking at Wyndelin – a small, beautiful, and inexpensive ebook by my favorite gluten-free baker, Marissa Froese. Wyndelin is the name of her charming Farm and Guesthouse (where you can book a stay!) My daughter loved looking through it, getting excited over the possibilities from the beautiful pictures. It reminds me of my favorite Christmas cookie book, which I would pour over every year dreaming of the wonderful treats within. Not all of the recipes are egg/dairy-free, but it is possible that plant-based dairy and flaxseed eggs could be substituted. I’m going to try and post the results on Instagram.
Vegan Butter Tarts by Unconventional Baker – no dairy, eggs, or corn syrup. If you can’t have cashews, you should be able to substitute sunbutter (sunflower butter) or almond butter. It will likely change the taste, but not by much!
Hamantaschen Cookies with Poppyseed Filling by Unconventional Baker – those triangular tart cookies normally filled with fruit or poppy seeds. This one I would love to make but only will if I have time. It’s a little bit more involved. If I make them, I may add a jelly filling, too.
Eggless Royal Icing by Wallflower Kitchen – so that we can decorate gingerbread and sugar cookies! Uses chickpea liquid (aquafabah).
Gluten-Free Vegan Shortbread Cookies by Unconventional Baker – these are very easy. They definitely taste better with a plant butter (and Earth Balance makes a soy-free version). When I made these last year for a birthday party, no one could tell that they were gluten-free and vegan. Note that the Wyndelin ebook also has a shortbread cookie recipe which looks amazing and can likely be made dairy-free with Earth Balance or something similar. Those ones look just like the danish butter cookies that are ubiquitous this time of year.
Vegan Fudge by Detoxonista- contains almond butter. I don’t know for sure, but you could try sunbutter for a nut-free version. This looks very easy.
Gluten-Free Vegan Vanilla Cut-Out Cookies by Unconventional Baker – basically sugar cookies without the sugar. A little more fancy. Probably good (I haven’t had a bad recipe from her yet.) Looks super easy and does not require refrigerating.
